    My French Canadian grandma used to make this for my dad and all his siblings. It has become a Jordan family staple. I like it with the anise, but feel free to adjust the amount or eliminate it all together. Kids generally don't like it with anise.

    Ingredients

    • I cup of corn meal
    • 1 tablespoon of butter
    • 1/2 cup of sugar (may want to adjust to taste)
    • 1 1/2 cups of water
    • 1/4- 1/2 teaspoon of anise

    Directions

    1. Heat a large skillet over medium. Add the corn meal and toast until it turns golden. Use a wooden spoon to push the cornmeal around the pan. Trust your nose, you should be able to smell when it is nice and toasted. Turn the heat off and mix in sugar and anise using wooded spoon. Next, create a well, and add butter. Mix melted butter with the corn meal mixture. It will crumble and be a little gritty. Turn heat back on medium and gradually add water. Add more or less depending on the consistency you want. The corn meal with thicken and turn into a mush. Serve as you would oatmeal or porridge, add a little milk to moisten.

            My dad used to make mush and put buttermilk in it. I like it without the anise, not a licorice fan. I haven't had mush in a long time, might have to make it soon.
