Middle Eastern Black Bean Salad
Ingredients
- 3 1/2 c. Cooked, Liquid removed Black Beans (1 c. dry)
- 1/2 c. Red Onion -- finely diced
- 1 lrg Tomato -- seeded and diced
- 1 sm Green Pepper -- seeded and Diced
- 1 med Cucumber -- seeded and Diced
- 1/2 c. Minced Parsley
- 1 Tbsp. Minced Fresh Mint
- 1/4 c. Lemon Juice
- 1 tsp Cumin
- 1/4 tsp Salt -- (or possibly to taste)
- 1/4 tsp Pepper
- 1/4 c. Extra virgin olive oil
Directions
- Combine salad ingredients together and toss lightly. For dressing, add in spices to the lemon juice and beat in oil. Pour over salad and refrigeratefor several hrs.
