  • Microwave Swedish Meatballs

    Ingredients

    • 1 pound ground beef
    • 1 egg
    • 1/2 cup dry bread crumbs
    • 1/2 cup milk (divided)
    • 1 small onion, finely chopped
    • 2 teaspoons parsley flakes
    • 1/2 teaspoon salt
    • 1/8 teaspoon allspice
    • 1/8 teaspoon pepper
    • 1 can cream of mushroom soup

    Directions

    1. Combine ground beef, egg, bread crumbs, 1/4 cup milk, onion, parsley, salt, allspice and pepper. Shape into 1-1/4” meatballs (about 20). Arrange in 8-inch square microwave safe dish. Cover with wax paper. Cook at high 6-8 minutes.
    2. In small bowl, blend soup and remaining milk; combine with meatballs. Cook, covered, at medium-high for 3-5
    3. minutes, or until heated through.
