  • Microwave Beer Bread

    Ingredients

    • 2 c. self-rising flour
    • 1 c. flour
    • 3 Tbsp. sugar
    • 12 ounce beer (can be light beer)
    • 1 Tbsp. softened butter cornflake crumbs

    Directions

    1. Mix all ingredients in a mixing bowl. Spray a glass loaf pan with cooking spray or possibly wipe with butter. Sprinkle bottom and sides with crumbs.
    2. Pour batter into pan and top with butter and a light sprinkling of corn flake crumbs
    3. Microwave at medium for 9 min, then on high for 2 min. Remove from pan and let cold slightly.
    4. Note: this recipe is over a decade old so the timing would be based on older, lower wattage microwaves than most people use today. Experimentation will be needed for the correct setting if you have a spanking new microwave.
