Mexican Tortilla Bake
Ingredients
- 1 pound grnd beef
- 1 med. onion, minced
- 1 clove garlic, chopped
- 2 cans tomato paste (6 ounce.)
- 1 1/2 c. water
- 1 to 2 tbsp. chili pwdr
- 1/4 teaspoon salt
- 1/2 c. lowfat sour cream
- 9 tortillas
- 2 c. shredded cheddar cheese
- 6 ripe olives, halved, for garnish
Directions
- Brown meat with onion and garlic. Pour off fat. Add in tomato paste, water, chili pwdr and salt. Simmer 20 min. Spoon 1/4 of meat sauce into 2 qt casserole dish. Spread 3 tortillas with lowfat sour cream; arrange over meat sauce, overlapping as necessary. Sprinkle with 1/4 of the cheese. Repeat layers 3 times, ending with meat sauce. Bake at 350 degrees for 20 min.
