Mexican Shrimp Cocktail
Ingredients
- 2 lb unpeeled large fresh shrimp
- 6 c. water
- 2 Tbsp. lime juice - (to 3)
- 3 x garlic cloves chopped
- 1/4 tsp salt
- 1/2 tsp freshly-grnd black pepper
- 1 c. ketchup
- 1/2 c. lime juice
- 1/4 c. chopped onion
- 1/2 tsp warm sauce - (to 1)
- 1/2 c. minced tomoto
- 1/2 c. minced cilantro
- 1 x avocado minced Lime wedges for serving
Directions
- Peel shrimp and de-vein. Bring 6 c. water and next 4 ingredients to a boil in a large saucepan; add in shrimp. Cook 2 to 3 min till shrimp turns pink. drain the shrimp, reserving 1/2 c. liquid.
- Stir together reserved liquid, ketchup, 1/2 c. lime juice, onion, and warm sauce. Stir in the shrimp, tomoto and cilantro. Refrigeratein the fridge
- Serve with avocado, and lime wedges.
- This recipe yields 6 servings;
- Comments: You can use pre-cooked shrimp. Stir it in as the recipe states, but take it out after 30 to 60 seconds.
