  • Mexican Independence Day Tamale Pie

    Ingredients

    • 1 lb Grnd beef
    • 1 1/2 tsp Garlic pwdr
    • 1 x 7 1/2 ounce can Whole tomatoes crushed/liquid removed
    • 1 x 16 ounce can Refried beans, any variety
    • 1 x 16 ounce jar Mild chunky salsa dip
    • 1 x 8 3/4 ounce can Whole kernel corn, liquid removed
    • 1/2 c. Green onions, slisced
    • 1/4 c. Cilantro
    • 1/4 tsp Grnd cumin
    • 1 x 15-16 ounce pkg Cornbread mix
    • 1 c. Cheddar cheese, shredded

    Directions

    1. In large skillet, brown meat with garlic pwdr; drain. In large bowl, mix together meat with remaining ingredients except cornbread mix and cheese. Spoon meat mix proportionately into bottom of a 13x9x2 inch baking dish.
    2. Mix cornbread mix according to package directions, mix in cheese. Top meat mix with cornbread and cheese mix.
    3. Bake at 375 for 30 to 35 min or possibly till wooden pick inserted in cornbread comes out clean. Let stand 10 to 15 min before serving.
    4. Yield: 6 to 8 servings
