Mexican Independence Day Tamale Pie
Ingredients
- 1 lb Grnd beef
- 1 1/2 tsp Garlic pwdr
- 1 x 7 1/2 ounce can Whole tomatoes crushed/liquid removed
- 1 x 16 ounce can Refried beans, any variety
- 1 x 16 ounce jar Mild chunky salsa dip
- 1 x 8 3/4 ounce can Whole kernel corn, liquid removed
- 1/2 c. Green onions, slisced
- 1/4 c. Cilantro
- 1/4 tsp Grnd cumin
- 1 x 15-16 ounce pkg Cornbread mix
- 1 c. Cheddar cheese, shredded
Directions
- In large skillet, brown meat with garlic pwdr; drain. In large bowl, mix together meat with remaining ingredients except cornbread mix and cheese. Spoon meat mix proportionately into bottom of a 13x9x2 inch baking dish.
- Mix cornbread mix according to package directions, mix in cheese. Top meat mix with cornbread and cheese mix.
- Bake at 375 for 30 to 35 min or possibly till wooden pick inserted in cornbread comes out clean. Let stand 10 to 15 min before serving.
- Yield: 6 to 8 servings
