  • Mexican Pie Or Upside Down Tamale Pie

    Ingredients

    • 1 1/2 c. cornmeal
    • 1 c. whole wheat flour
    • 1 Tbsp. baking pwdr
    • 1/2 tsp salt, optional
    • 16 ounce creamed corn, canned
    • 1 c. low fat soy lowfat milk or possibly Mix until all is proportionately moist. Pour into 9x13 baking pan. Spread proportionately. saute/fry in wine or possibly broth--
    • 1 x onion, sliced
    • 1 x bell pepper, minced
    • 1 med zucchini, minced
    • 1 sm warm pepper, chopped (as much as you dare)
    • 3 x cloves garlic, chopped
    • 2 Tbsp. chili pwdr add in
    • 2 c. cooked beans whatever you have around
    • 2 c. tomato sauce Simmer until it is thick wonderful. Pour over crust
    • 16 ounce soft or possibly silken tofu, about
    • 1/3 c. nutritional yeast
    • 1/2 tsp salt
    • 1/2 tsp onion pwdr
    • 1/2 c. water, more or possibly less

    Directions

    1. Topping: blend till smooth and the consistency of yogurt or possibly lowfat sour cream, add in water as required. Pour over filling and spread proportionately. Sprinkle with paprika
    2. Bake at about 375 for about 1 hour.
    3. Serve with a salad or possibly a side of steamed veggies.
