  • Mediterranean Tuna Burgers With Lemon Basil Mayonnaise

    Ingredients

    • Burgers
    • 1 lb Fresh tuna steaks -- trimmed And grnd
    • 1/4 lrg Red bell pepper -- finely Minced
    • 1 whl green onion -- finely Minced
    • 2 Tbsp. Chardonnay
    • 1 Tbsp. Horseradish mustard
    • 1 Tbsp. Plus 1 tsp extra virgin olive oil
    • 1/2 tsp Seasoned salt
    • 1/2 c. Italian bread crumbs Vegetable oil for brushing Grill rack
    • 4 x Seeded hamburger rolls
    • 4 slc Mozzarella or possibly provolone Cheese
    • 12 ounce Marinated artichoke hearts Liquid removed well Minced Baby mixed greens Kalamata olives for garnish Lemon Basil Mayonnaise
    • 1/2 c. Lowfat mayonnaise
    • 1 tsp Finely grated lemon zest
    • 6 lrg Fresh basil leaves -- Minced
    • 2 tsp Capers -- liquid removed

    Directions

    1. For sauce: Combine all in small bowl; chill 1 hour to allow flavors to blend. Prepare medium warm fire in covered grill. Combine all burger ingredients using just sufficient bread crumbs to make mix right consistency for shaping . Shape into 4 patties. Brush grill rack with vegetable oil. Place patties on grill; cook till browned on 1 side, about 4 min, flip and cook to desired doneness. Place buns, cut side down, on outer edges of grill to lightly toast. Place cheese on burgers last minute of cooking to heat. Spread lemon basil mayo on cut sides of buns. Spread bun bottoms proportionately with layer of artichokes, baby mixed greens. Top with burger and other half of bun. Garnish bun with large olive speared into the middle.
    2. Serves 4.
