  • Burgers With Lemon And Coriander

    Ingredients

    • 1 x 500 g pack Waitrose British Lean Grnd, (10% fat) Beef
    • 85 gm Waitrose Baby Spinach, finely minced (3oz)
    • 1 lrg Carrot, peeled and grated
    • 140 gm Waitrose canned Chickpeas, liquid removed and mashed well (5z)
    • 6 x Salad onions, finely minced
    • 1 x Lemon, zest of
    • 2 Tbsp. Fresh coriander, finely minced (30ml)
    • 2 tsp Schwartz Grnd Cumin, (10ml)
    • 2 Tbsp. Worcester Sauce, (30ml) Freshly grnd black pepper
    • 1 x Egg, (large) to bind, beaten Extra virgin olive oil

    Directions

    1. In a large mixing bowl combine all the ingredients and mix well using a fork.
    2. Shape the mix into 10 burgers each weighing approximately 100g (3 1/2oz).
    3. Heat a little extra virgin olive oil in a frying pan and fry over a medium to high heat for 4 min on each side or possibly till thoroughly cooked and there is no pink meat. Alternatively, use a griddle pan and leave out the extra virgin olive oil to fry.
    4. Serve the burgers immediately with Waitrose Greek-style Picnic Pitta Breads, warmed slightly and split open. Dress with a raita-style sauce made from natural yogurt, with a handful of freshly minced coriander or possibly mint, a squeeze of lemon juice and a little salt and freshly grnd black pepper. Or possibly serve with potato wedges cooked with a drizzle of extra virgin olive oil and a little sea salt in a warm oven for about 35 min.
    5. NOTES : Makes 10. This quick and easy supper for all the family uses Waitrose lean grnd beef mixed with vegetables and the fresh taste of lemon and coriander.
