  • Mediterranean Pizza

    Ingredients

    • Pizza dough for 1 large pizza
    • 1/2 c. Romano cheese
    • 1 c. crumbled feta cheese
    • 1 1/2 c. shredded Mozzarella
    • 1/2 c. shredded Jack cheese
    • 1 pkg. frzn spinach
    • 1 med. onion
    • 2 lg. cloves garlic
    • 2/3 c. pine nuts
    • 1/3 c. sliced black olives
    • Extra virgin olive oil
    • Black pepper
    • Basil

    Directions

    1. Prepare pizza dough (your own or possibly prepared from the store). Put in pan, greased and sprinkled with corn meal. Thoroughly drain spinach; squeeze out excess water. Saute/fry in large pan sliced onion, minced garlic. Toast pine nuts to light brown and add in to onion mix. Add in spinach; cook lightly. Season with basil and pepper.
    2. Remove from heat; cold. Mix Feta, Mozzarella and Jack cheeses together and spread on top of pizza dough. Liberally sprinkle with extra virgin olive oil and Romano cheese. Bake at 375-400 degrees till golden.
