  • Chicken Pizza With A Rice Crust

    Ingredients

    • This delicious pizza has a generous amount of toppings and is almost a meal in itself. It is best to eat this pizza with a fork.
    • 4 c. cooked rice (short grain rice works best)
    • 1/2 c. grnd walnuts (optional)
    • 1 1/2 c. (6 ounce.) shredded Swiss cheese, divided
    • 1/2 c. grated parmesan cheese, divided
    • 1 x egg, beaten
    • 2 tsp extra virgin olive oil
    • 2 x boneless, skinless chicken breast halves cut into bite size pcs
    • 1 sm onion sliced
    • 1/2 x green bell pepper, sliced
    • 1/2 x red bell pepper, sliced
    • 1/4 lb fresh mushrooms, sliced
    • 1/2 c. sliced ripe olives
    • 1 x (14 ounce.) jar pizza sauce
    • 1 tsp dry basil leaves, crushed
    • 1 tsp dry oregano leaves, crushed
    • 1 c. (4 ounce.) shredded mozzarella cheese Preheat oven to 375. Combine rice, walnuts, 1/2 c. of Swiss cheese,
    • 1/4 c. parmesan cheese and egg in large bowl. Press cheese mix proportionately onto bottom and 1/2 in. up the side of a greased
    • 14 x in. pizza pan. Bake 10 minutes. Let stand at room temp. till cold.

    Directions

    1. Heat oil in large skillet over medium-high heat. Add in chicken, onion, bell peppers, mushrooms and olives. Cook and stir 7 minutes. or possibly till chicken is no longer pink in center; drain off excess liquid.
    2. Spread pizza sauce over cooled rice crust. Spread remaining 1 c. Swiss cheese over sauce. Spread chicken mix over cheese. Sprinkle with herbs.
    3. Top pizza with mozzarella cheese and remaining 1/4 c. parmesan cheese.
    4. Bake for 15 to 20 minutes. Remove from oven. Let stand at room temp. to cold slightly before serving.
