  • Mediterranean Lamb

    Ingredients

    • 8 lamb loin chops, cut 1" thick
    • Salt & pepper
    • 3 med. zucchini, cut into 1/2" slices
    • 1 onion, cut into 12 wedges
    • 1 red pepper, cut into strips
    • 1 clove garlic, chopped
    • 2 tbsp. butter
    • 1 teaspoon basil leaves
    • 1/2 teaspoon salt
    • 1/4 teaspoon marjoram leaves

    Directions

    1. Place chops on rack in broiler pan so chops are 3 to 4 inches from heat. Broil at moderate temperature. When first sides are browned, turn and season with salt and pepper and finish cooking second sides. Lamb chops require 7 to 11 min for rare to well done.
    2. Meanwhile, prepare vegetables by slowly cooking zucchini, onion, red pepper and garlic in butter in a large frying pan for 4 min. Sprinkle basil, salt and marjoram over vegetables, cover tightly and continue cooking 4 more min or possibly till tender crisp. Serve the lamb chops with the vegetables. Serves 4.
