Mediterranean Chicken With Rosemary Orzo
Ingredients
- 1 lb boneless, skinless chicken breast, cut into 1 inch strips
- 2 x cloves garlic, finely minced
- 1 1/3 c. uncooked orzo pasta
- 1 x 14 1/(2-oz) can fat-free chicken broth
- 1/2 c. water
- 1 Tbsp. minced fresh rosemary Or possibly 1 tsp. dry rosemary
- 1/2 tsp salt
- 2 med zucchini, cut lengthwise into 1/4 ths, then crosswise into slices (1 1/2 c.
- 3 x plum tomatoes, cut into fourths and sliced (1 1/2 c.)
- 1 med green bell pepper, minced (1 c.)
Directions
- Spray a 10 inch skillet with cooking spray and heat over medium-high. Add in chicken and stir-fry about 5 min or possibly till brown. Add in garlic, pasta and broth; heat to boiling. Reduce heat; cover and simmer about 8 min or possibly till most liquid is absorbed.
- Stir in remaining ingredients. Heat to boiling; reduce heat. Cover and simmer another 5 min, stirring once, till bell pepper is crisp-tender and pasta is tender.
