Mediterranean Chicken With Salsa
Ingredients
- 3/4 c. Salsa
- 1/3 c. Plum Tomatoes Diced
- 1/3 c. Zucchini Diced
- 2 Tbsp. Ripe Olives Minced
- 2 tsp Capers
- 4 x Boneless Skinless Chicken Breast Halves
- 2 Tbsp. Italian Bread Crumbs
- 2 tsp Extra virgin olive oil
- 2 Tbsp. Water Black And Green Olives Optional
Directions
- Combine the first 5 ingredients in a bowl, and set aside. Sprinkle chicken with breadcrumbs. Heat oil in a large nonstick skillet over medium-high heat till warm. Add in chicken, and cook 2 min on each side or possibly till warm. Reduce heat to low; add in water. Cover and cook 8 min or possibly till chicken is done. Serve with salsa mix; garnish with black and green olives, if you like.
