- 1 lb beef
- 1/2 cup corn (I used canned)
- 1 large shallot chopped
- 1/4 - 1/2 cup of quick oats
- 1/4 cup of cauliflower (chopped)
- salt and pepper to taste
- seasonings of your choice
Directions
- Preheat the oven to 350 degrees
- Combine all ingredients in a bowl, add any other seasonings/herbs that you like in your meatloaf.
- Grease 9 out of 12 cups in a muffin tray.
- Split the mixture evenly between the 9 cups and fill the remaining three with a little bit of water.
- Bake for 25 - 30 minutes. Check them after 20 mins..
- Enjoy fresh out of the oven or cool and freeze in a ziploc bag.
