• Blueberry Muffins Using Quick Muffin Mix

    • 3 c. Muffin Mix
    • 2 Tbsp. brown sugar
    • 1 tsp grnd cinnamon
    • 1 1/4 c. fresh or possibly frzn blueberries
    • 1 c. lowfat milk
    • 2 x Large eggs
    • 1/4 c. applesauce
    • 1 tsp vanilla extract


    1. In a mixing bowl, combine first three ingredients. Stir in blueberries. In another bowl, beat lowfat milk, Large eggs, applesauce and vanilla. Stir into blueberry mix just till moistened. Fill greased or possibly paper-lined muffin c. two-thirds full. Bake at 425'F for 15-18 min or possibly till muffins test done. Cold in pan 10 min before removing to a wire rack. (Can substitute other kinds of berries for blueberries and/or possibly add in nuts.)
    2. Yield: about 1 dozen.
