My Grandma used to make her meatloaf this way when I was a little girl, now I make it for my family, and they just eat it all up! No leftovers for this meal!

    Ingredients

    • 2 lbs ground chuck
    • 1 envelope of onion soup mix
    • 1 egg
    • 1/2 cup of Italian bread crumbs
    • 1 can of cream of chicken soup
    • !/2 can of milk (using the soup can)
    • salt and pepper

    Directions

    1. Mix the first four ingredients in a large bowl
    2. Shape into a loaf and place in a glass baking dish
    3. Cover with foil and bake in a 350 degree oven for 30-40 minutes ( until just about done, but not completely.
    4. Take out of oven set aside
    5. in a smaller bowl mix soup, milk, salt and pepper
    6. Pour over meatloaf and put back in oven
    7. Bake until done through.
    8. The soup makes a gravy we use to put over homemade mashed potatoes! YUM-O!

Now this looks like an interesting and different twist on the usual old "tomato glazed" meat loaf. Not that there's anything remotely wrong with a tomato glaze on a meatloaf. I'll have to try this one.
      Thanks for posting.
