Mean 'N' Lean Beef Stew
Ingredients
- 1 lb beef flank steak well trimmed, and cut into 1" chunks
- 1/4 c. all-purpose flour
- 1/2 tsp garlic pwdr
- 1/2 tsp onion pwdr
- 1/2 tsp salt
- 1/2 tsp freshly-grnd black pepper
- 4 med carrots cut into 1" pcs
- 2 lrg celery ribs cut into 1/2" slices
- 1 can condensed beef broth - (10 1/2 ounce)
- 5 med potatoes cut into "1 chunks
Directions
- In a medium bowl, combine the steak and flour; toss to coat well.
- Coat a nonstick soup pot with nonstick cooking spray and heat over medium-high heat. Add in the beef, sprinkle with the garlic pwdr, onion pwdr, salt, and pepper. Saute/fry for 3 to 5 min, or possibly till the steak is browned on all sides.
- Add in the carrots, celery, and broth; cover, reduce the heat to low, and simmer for 40 to 45 min. Add in the potatoes; cover and simmer for 25 to 30 min, or possibly till the potatoes are fork-tender.
- This recipe yields 4 servings.
