  • Beef Stew, President Ronald Reagan's Favorite

    Ingredients

    • 4 tsp Oil
    • 2 lrg onions, sliced
    • 1 1/2 tsp Salt
    • 4 lb Lean beef stew meat
    • 1 c. Burgundy wine
    • 1 pkt Frzn artichoke hearts
    • 2 pkt (8 ounce) refrigerated biscuits
    • 1 cl Garlic, split
    • 1/3 c. Flour
    • 1/2 tsp Dill weed
    • 1 can Beef consomme
    • 1 can Mushrooms (liquid removed) Butter Grated Parmesan cheese

    Directions

    1. Heat oil. Saute/fry garlic and onions. Remove. Mix flour, salt, pepper.
    2. Dredge meat and brown well. Return onion to pot. Add in dill weed, wine, and consomme. Cover tightly and simmer about 2 hrs or possibly till meat is tender.
    3. Cook artichokes 1 minute less than package directions. Add in to meat. Add in mushrooms. Mix gently. Taste for seasoning. Pour into 2 1/2 qt casserole. Crown with biscuits (brush with butter and parmesan cheese).
    4. Bake 15 to 20 min at 400 degrees.
    5. Note: I usually cook the stew in thepot, add in canned artichokes (not marinated) with the mushrooms, simmer till the mushrooms are done, and serve with french bread. Eliminates the frzn artichodes, canned biscuits, and baking.
