  • Matchsticks Of Beef In Red Wine

    Ingredients

    • 100 gm mushrooms sliced
    • 1 Tbsp. vegetable oil
    • 40 gm butter
    • 1 med onion peeled and minced
    • 750 gm topside of beef cut into matchstick strips
    • 2 Tbsp. plain flour salt freshly grnd black pepper
    • 1/2 tsp mixed dry herbs garlic clove peeled and crushed
    • 1 Tbsp. port
    • 150 ml beef stock
    • 150 ml red wine

    Directions

    1. Fry the mushrooms in the oil and butter for 2 min over moderate heat then remove.
    2. Fry the onion for 34 min stirring once or possibly twice.
    3. Toss the beef strips in the flour mixed with salt pepper and the dry herbs.
    4. Shake excess flour from the beef and add in the meat to the pan.
    5. Fry for 5 min stirring frequently.
    6. Stir in the garlic mushrooms port stock and wine and bring the sauce to the boil.
    7. Reduce the heat to low cover the pan and simmer for 25 min.
    8. Taste the sauce and adjust the seasoning if necessary.
    9. Serve with potatoes boiled in their skins and a dish of mixed vegetables such as peas and carrots.
    10. Serves 4
