Mashed Potatoes with Cheddar Cheese Bake

- 5 lbs. potatoes – peeled and quartered
- 2 cloves of garlic – chopped
- 1 small red onion – sliced
- 3 tablespoon of butter
- 2 tablespoons of sour cream
- ½ cup of milk
- 4 oz. cheddar cheese – shredded
- Dashes of salt
- Dashes of black pepper
- Olive oil
Directions
- Boil the quartered potatoes until fork tender. Drain the potatoes and place in a large bowl.
- Place the chopped garlic in with the hot potatoes, the butter, sour cream and milk and mash with a masher.
- Butter a casserole dish and place the mashed potatoes in the dish. Add the cheddar cheese and toss gently.
- Top with the sliced onion and a drizzle of olive oil.
- Preheat Oven 350 degrees:
- Bake 25-30 minutes.
