Mashed Potatoes with Cheddar Cheese Bake

Ingredients

  • 5 lbs. potatoes – peeled and quartered
  • 2 cloves of garlic – chopped
  • 1 small red onion – sliced
  • 3 tablespoon of butter
  • 2 tablespoons of sour cream
  • ½ cup of milk
  • 4 oz. cheddar cheese – shredded
  • Dashes of salt
  • Dashes of black pepper
  • Olive oil

Directions

  1. Boil the quartered potatoes until fork tender. Drain the potatoes and place in a large bowl.
  2. Place the chopped garlic in with the hot potatoes, the butter, sour cream and milk and mash with a masher.
  3. Butter a casserole dish and place the mashed potatoes in the dish. Add the cheddar cheese and toss gently.
  4. Top with the sliced onion and a drizzle of olive oil.
  5. Preheat Oven 350 degrees:
  6. Bake 25-30 minutes.
