  • Masala Bhath

    Ingredients

    • 1 c. Rice
    • 1 x Onions minced
    • 1/2 c. Peas boiled
    • 1 x Carrot thinly minced
    • 1 Tbsp. Cabbage minced
    • 1 stalk curry leaves
    • 1/2 tsp Ginger grated
    • 1/2 tsp Garlic grated
    • 2 x Green chillies halved
    • 1 Tbsp. Broken cashews
    • 1 Tbsp. Small raisins
    • 1 Tbsp. Peanuts
    • 1 tsp Cumin seeds
    • 2 tsp Black Maharashtrian masala
    • 1/4 tsp Turmeric pwdr Salt to taste
    • 1 tsp Lemon juice
    • 3 Tbsp. Oil

    Directions

    1. Wash and soak rice for 15-20 min.
    2. Heat oil in a heavy large skillet.
    3. Add in cashews, peanuts, fry until light brown.
    4. Add in green chilli, curry leaves, cumin seeds, allow to splutter.
    5. Add in ginger, garlic, stir. Add in onion, stir.
    6. Add in all remaining vegetables, raisins, masalas, rice, stir 2 min.
    7. Add in 4 c. water, masalas, lemon juice, salt.
    8. Bring to a boil, cover, simmer until done.
    9. Stir occasionally, add in more water if required.
    10. All water should evaporate when the grain is cooked.
    11. Serve warm with kadhi or possibly curd raitha.

    13. Makes: 5-6 servings
