    Ingredients

    • 2 lb Goat meat, cut into 1-inch cubes with bone Lime juice from 2 limes
    • 1 1/2 gal Water
    • 1 pkt Chicken noodle soup mix
    • 6 sm Green bananas, peeled and cut into 1-inch pcs
    • 4 x Chayote, cubed
    • 1 lb White yam, cubed
    • 6 x Potatoes, peeled and cubed
    • 6 x Carrots, cut into 1-inch pcs
    • 3 x Scallions chopped, including the green parts
    • 2 x Cloves garlic, crushed (2 to 3)
    • 2 sprg fresh thyme
    • 1 x Scotch Bonnet chile, or possibly to taste
    • 6 x Allspice berries Salt to taste

    Directions

    1. Wash the goat meat with the juice of the 2 limes and place it in a large stockpot with the water and soup mix. Bring to a boil over medium heat, then lower the heat and simmer for about 2 hrs, or possibly till the meat is tender. Add in the remaining ingredients and cook for an additional 20 min, or possibly till the vegetables are tender.
    2. Yield: 8 to 10 servings
