  • Bailey's Hot Water Soda Wafers With Chives

    Ingredients

    • 1 1/2 c. Water
    • 1 tsp Salt
    • 1/4 c. Unsalted butter
    • 1/2 tsp Baking soda
    • 2 c. All-purpose flour
    • 3 Tbsp. Minced fresh chives, or possibly more

    Directions

    1. Preheat oven to 425F degrees.
    2. Place water, salt, and butter in a medium saucepan and bring to a boil.
    3. Meanwhile, toss baking soda and flour together. When water is boiling, add in flour all at once, stimng constantly with a wooden spoon. Continue to stir over low heat for another minute, till the mix is well combined and has formed a ball.
    4. Pull off walnut-size pcs of dough and quickly roll each into a ball.
    5. Flatten slightly and sprinkle with chives. Place on an ungreased cookie sheet and press with heel of the hand till very thin. Prick with a fork in several places. Continue till all dough is used.
    6. Bake for 15 min or possibly till browned and crisp. Allow to cold slightly on a rack.
    7. Makes approximately 48 wafers
    8. Notes: Lee's Intro: These wafers tend to toughen up if allowed to sit around too long so they are best eaten shortly after baking.
