Mango Prawns
Ingredients
- 12 medium-sized prawns, boiled, peeled and cut into chunks
- 4 big ripe mangoes, halved lengthwise
- 1 sweet red bell pepper, grilled, peeled, seeded, and cut into strips
- fresh min leaves for garnishing
- Dressing:
- 1/2 cup mayonnaise
- 1 250 ml all-purpose cream
- 1 tbsp calamansi juice
- 1 tsp mustard
- 1 tsp sugar
- salt and pepper to taste
Directions
- Prepare prawns as directed.
- Scoop flesh of mangoes in cubes with spoon leaving a thin layer of flesh near skin to keep skin rigid.
- Combine dressing ingredients, toss in prawns and mango gently just enough to coat with dressing without masking ingredients completely.
- Fill mango skins with mixture.
- Garnish with pepper strips and mint leaves. Serve chilled.
