- 3 egg whites.
- 225g caster sugar
- .½ tsp baking powder.
- 14 Ritz crackers
- .85g hazelnuts crushed plus some to serve.
- Flesh of 1 large ripe mango, chopped.
- 300ml crème fraiche
- .300ml double cream, whipped.

- How to make mango surprise crunch
- 1. Preheat the oven to 160C/gas mark 2. Whisk the egg whites in a clean bowl until they form soft peaks. Add the sugar 1 tbsp at a time along with the baking powder and continue to whisk to stiff peaks. Fold in the crackers and nuts and spoon into a greased 22cm (9in) pie or plan dish and level the surface. Bake for 35 minutes then remove and cool, and refrigerate overnight.
- 2. Crush the meringue and half fill 4 serving glasses. Mix together the mango and crème fraiche and spoon over the meringue. Top with the whipped cream and serve scattered with crushed nuts.
