    This is one of my Mom's classic recipes. It is perfect for a large barbeque or pot luck. I talk it to a block party in San Carlos last night and it was GONE in about an hour. Very good flavors!

    Ingredients

    • Dressing:
    • 1/2 tsp salt
    • 2 Tbsp sugar
    • 2 Tbsp red wine vinegar
    • 1/4 cup vegetable oil
    • Dash of tabasco or other red pepper sauce
    • 1 Tbsp fresh parsley, minced
    • Salad:
    • 1/2 cup sliced almonds
    • 1/4 sugar
    • 6 cups romaine lettuce or spinach
    • 1 cup chopped celery
    • 2 green onions, thinly sliced
    • 11 oz can mandarin oranges, drained

    Directions

    1. Place all ingredients of dressing in a jar, shake well, and refrigerate.
    2. Place almonds and sugar in a skillet over low heat. Stir until sugar is melted and almonds are coated. pour almonds onto a sheet of waxed paper to cool. When cool, break the almonds into small pieces. Note: If done ahead of time, almonds can be stored in an airtight container until you assemble the salad.
    3. Place romaine, celery, onions, oranges, and almonds in salad bowl. Pour dressing over the top, toss the salad, and serve!
