Mama's Puerto Rican Rice And Beans
Ingredients
- 2 can Kidney beans
- 1 sm can Tomato sauce
- 1 env "Sazon" seasoning
- 1 x branch Cilantro, minced
- 1 sm Potato
- 8 x Olives, green
- 1 sm cube Ham, diced
- 1 Tbsp. Extra virgin olive oil
- 1 1/2 tsp Salt
- 3 c. Rice, cooked
Directions
- In saucepan, heat extra virgin olive oil. Add in all seasonings except tomato sauce and beans. Saute/fry for about 3 min. Add in tomato sauce and saute/fry about 1 more minute. Add in undrained beans from can. Add in water to cover, about 1 can. Simmer on medium to low for about 20 min, stirring to keep from burning. Cook till sauce thickens.
- Serve over rice.
- Sazon is found in the ethnic food section. Any product named "Sofrito" can be substituted.
