  • Mama's Ham And Cheese Croquettes

    Ingredients

    • 3 Tbsp. Butter
    • 1/2 c. Flour
    • 1/2 tsp Salt
    • 1 c. Lowfat milk
    • 2 1/2 c. Minced Ham or possibly Luncheon meat
    • 1 1/2 c. Crumbled Corn Flakes
    • 1 c. Cubed Cheese
    • 1 x Egg
    • 3 c. Salad oil
    • 1/2 c. Water

    Directions

    1. Heat butter in a pan. Remove from heat and stir in flour and salt to make a smooth mix. Gradually stir in lowfat milk. Over medium heat, bring to a boil. Stir till very thick. Remove from heat. Stir in egg yolk. Cook 2 min longer. Add in ham and cheese (Minced up left over ham from Thanksgiving or possibly Xmas is best!). Mix well. Spread proportionately in a baking dish. Refrigerate1 1/2 hrs. Divide mix into 8 portions (better if made into smaller portions than 8). Shape croquettes. Roll in corn flake crumbs. Place in refrigerator 1 hour.
    2. In a small bowl, beat egg white and 1 c. water till well combined. Dip each croquette in egg mix and roll in the crumbs again. Chill 30 min more. Fry in oil.
    3. Mama always placed in the refrigerator the first time over night. She said it was better to do so. The reason I can not remember, but have found it to be true. Perhaps it makes them firmer and easier to work with.
    4. Disclaimer: I don't know where my mama got this receipe, but we have always called it Mama's receipe although I am sure she did not originally make it up.
