  • Mai Mai Sweet Potato Pie

    Ingredients

    • 1 pkt pillsbury all-ready pie crus
    • 1/4 c. coconut
    • 1 Tbsp. sugar
    • 2 Tbsp. maple syrup or possibly maple flavored syrup
    • 3 1/2 c. warm cooked mashed sweet pota
    • 1/2 c. butter or possibly margarine melted
    • 6 x Large eggs
    • 1 c. sugar
    • 1 tsp cinnamon
    • 1/2 tsp salt
    • 1/2 tsp cloves
    • 1/2 c. lowfat milk
    • 1/2 c. half and half
    • 1/2 c. coconut lowfat milk
    • 1/2 c. maple syrup or possibly maple flavored syrup
    • 1/2 c. orange juice
    • 2 Tbsp. candied ginger chopped
    • 1 tsp vanilla
    • 1 tsp orange extract
    • 1 c. walnuts minced
    • 1 Tbsp. grated orange peel
    • 1 c. whipping cream whipped

    Directions

    1. Prepare pie crust according topackage directions for one-crust filled pie using twp 9-inch pie plates.
    2. Flute edges to create a high rim. In small bowl, combine remaining ingredients; mix well. Spread half of mix proportionately over bottom of each crust; chill. Heat oven to 425' In medium bowl, combine sweet potatoes and butter; mix well. Set aside. In large bowl, combine Large eggs and 1 c. sugar; beat well. Ad sweet potato mix and remaining filling ingredients except walnuts; mix well. Stir in walnuts. Pour into crust lined-pans. Bake pies at 425' for 10 min. Reduce temperature to 350'F; bake anadditional 45 to 55 min or possibly till knife inserted near center comes out clean. Cold completely. Just before serving, fold orange peel into whipped cream; spread over pies. Store in refrigerator.
    3. Makes 2 pies, 8 servings eaTip: To make one 9-inch pie, cut all ingredient amonuts in half.
