madhur jaffrey's chana dal
Ingredients
- 1 1/2 cup chana dal
- 5 c water
- 1/2tsp ground tumeric
- 1/2tsp salt
- 2 thin slices unpeeled ginger
- 3tbls vegetable oil
- 1/2tsp whole cumin seeds
- 2 cloves garlic chopped
- 1/4-1/2 tsp red chili powder
Directions
- put dal in heavy pot with water
- bring to a boil and remove surface skum
- Add tumeric and ginger
- cover, leavinglid slightly ajar,turn heat to low and simmer gently for 1 hour or until dal is tender
- Stir every five minutes or so during last 1/2 hour to prevent sticking
- Remove the ginger slices
- Add salt and garam masala to the dal
- Stir to mix.
- heat the oil or ghee in a small frying pan over medium heat
- When hot put in the cumin seeds followed by the garlic
- Stir fry until garlic pieces are lightly browned
- Put the chili powder into the pan
- immediately lift the pan off the heat and pour the mixture into the dal.
- Stir to mix
