A friend invited us over for a BBQ and made this appetizer. I don't like brie, never have, and this is to die for! I couldn't stop thinking about it all week and decided to make it tonight. No one will be disappointed by this. It's actually a recipe from Ina Garten's Back to Basics cookbook.

    Ingredients

    • 1 french baguette, sliced 1/2 thick diagonally
    • 12 ounces good french brie, cut into 4 wedges
    • 6 tablespoons honey
    • 3 T roasted and salted pistachios
    • 1 T syrupy aged balsamic vinegar
    • 3 T good olive oil
    • Kosher salt and fresh ground black pepper
    • 1 large granny smith apple, cored and thinly sliced
    • 4oz. bag of mache

    Directions

    1. Preheat oven to 350 degrees. Place the sliced bread on a sheet pan and bake for 6-8 minutes, until crisp.
    2. Arrange 4 wedges of Brie snugly in one layer in a glass or ceramic baking dish. Drizzle with honey and scatter pistachios over the top. Bake for 3-5 minutes, until the brie just begins to ooze but isn't melted. Be careful - it happens fast!
    3. Place the mache in a large bowl and toss it gently with the balsamic vinegar and olive oil. Sprinkle with salt and pepper.
    4. Divide the salad among 4 large salad plates and place a piece of the warm brie with pistachios on each plate next to the mache. Place a quarter of the apple slices on each plate fanned out on one side of the brie. Place 2-3 slices of toasted baguette on the other side of the brie. Drizzle with the honey still in the baking dish and serve immediately.

Hi John. I just updated the recipe :-), it's 4 ounces of mache. T.J.'s sells it by the bag. I also posted a picture which doesn't do it justice. It's soo good!

Hi Aspen...this looks AWESOME and I want to try it. I don't see any Mache on the ingredient list. How much should I use?
