  • Lucille's Chocolate Cream Pie

    Ingredients

    • 1 bake 8" pie shell
    • 2 sq. unsweetened chocolate
    • 1/2 c. sugar
    • 3/4 teaspoon salt
    • 2 tbsp. butter
    • 1/2 c. heavy cream (whipping cream)
    • 3 1/2 c. lowfat milk
    • 1/4 c. butterscotch morsels
    • 2/3 c. flour
    • 1 egg or possibly 2 egg yolks, slightly beaten
    • 1 teaspoon vanilla

    Directions

    1. Heat lowfat milk, chocolate and morsels in heavy saucepan over low heat, stirring till blended. Combine dry ingredients. Add in lowfat milk mix gradually, stirring till smooth. Return to saucepan and cook, stirring till thickened. Stir small amount of warm mix into egg. Then stir quickly into remaining mix in saucepan. Cook 2 min over low heat, stirring constantly. Remove from heat; add in butter and vanilla. Turn into pastry shell. Chill. Top with sweetened whipped cream. GOOD! GOOD!
