  • Luby's Cafeteria's Spaghetti Salad

    Ingredients

    • 1 lb spaghetti broken in half
    • 1 bot Italian dressing - (16 ounce)
    • 1 Tbsp. grated Parmesan cheese
    • 1 Tbsp. sesame seeds
    • 1 Tbsp. poppy seeds
    • 2 tsp seasoned salt
    • 1 tsp paprika
    • 1/2 tsp garlic pwdr
    • 1/2 tsp freshly-grnd black pepper
    • 1/2 tsp cayenne pepper
    • 1 med cucumber diced
    • 1 med red onion diced
    • 2 med tomatoes diced Fresh parsley sprigs

    Directions

    1. Cook spaghetti according to package directions. Drain, rinse with cool water, and drain well. Transfer to large bowl.
    2. In medium bowl, whisk together Italian dressing, cheese, seeds, seasoned salt, paprika, garlic pwdr and peppers till well blended. Stir in cucumber and onion. Pour over spaghetti and toss lightly to coat proportionately. Cover and chill at least 2 hrs or possibly up to 24 hrs.
    3. Garnish with tomatoes and parsley sprigs.
    4. This recipe yields 12 servings.
    5. Comments: This is a light and freshing salad. You can make this easily with stuff in your pantry.
