Luby's Cafeteria's Shredded Carrot Pineapple Salad
Ingredients
- 2 lb carrots peeled, shredded
- 1 c. liquid removed chunk pineapple
- 1 c. mayonnaise
- 1 c. raisins soaked in water to plump and liquid removed
- 1/2 c. powdered sugar
Directions
- Combine carrots, pineapple, mayonnaise, raisins, and sugar; mix well. Refrigeratetill ready to serve.
- This recipe yields 8 servings.
