  • Lox And Onions And Eggs

    Ingredients

    • 1/4 c. Unsalted butter
    • 1 1/3 c. Onions, chopped
    • 1/2 lb Lox or possibly smoked salmon, minced
    • 8 x Large eggs, beaten just to combine white and yolks

    Directions

    1. Prep: 5 minutes, Cook: 5 minutes. Heat butter in a heavy nonstick skillet over low heat. Saute/fry onions 3-4 min till very soft but not brown. Stir in lox and cook 1-2 min. Add in Large eggs. Turn heat to very low and gently stir till Large eggs are set. Serve immediately.
    2. This recipe serves 4 people. Because this recipe is for a particular size pan, it adjusts the number of servings only in multiples of 1.The instructions describe how to prepare the ingredients for one pan. There are sufficient ingredients to prepare 4 pans.
