  • Low Fat Baked Potato Skins

    Ingredients

    • 4 med Baking potatoes Pam butter flavor non-stick spray
    • 1/2 c. Grated fat-free cheddar cheese
    • 3 Tbsp. VERY lean, cooked bacon bits
    • 1/4 c. Chopped green onions

    Directions

    1. Scrub potatoes and pierce with a fork. Bake in a preheated 400 oven till soft, about 1 hour. Cut potatoes in half lengthwise and scoop out centers leaving a 1/4" shell. Reserve potato pulp for another use. Cut shells in half, lengthwise. Spray shells with butter flavored spray, then place on a large baking sheet. Bake in a preheated 500 oven for 15-20 min till crisp. Sprinkle proportionately with cheese, bacon bits and onion. Return to 400 oven for 3 min or possibly so to heat cheese.
    2. lowfat sour cream on top is nice, too!)
