  • Lentil Vegetable Soup From Tops

    Ingredients

    • 3 Tbsp. extra virgin olive oil
    • 1 lrg Onion minced
    • 1 x green bell pepper minced
    • 3 x cloves garlic chopped
    • 8 c. water
    • 3 x 8 ounce cans tomato sauce
    • 1 1/2 c. lentils
    • 1 c. brown rice
    • 1 c. dry white wine
    • 3 x carrots sliced
    • 3 x celery stalks sliced
    • 2 lrg red potatoes diced
    • 2 x zucchini sliced
    • 1 tsp dry thyme crumbled
    • 1 tsp dry basil crumbled

    Directions

    1. Heat oil in heavy large saucepan over medium-high heat. Add in onion, bell pepper and garlic, saute/fry till tender, about 5 min. Add in remaining ingredients. Cover and simmer till lentils and rice are tender and soup is thick, about 1 hour 15 min. Season with salt and pepper, to taste.
