Lentil Vegetable Soup From Tops
Ingredients
- 3 Tbsp. extra virgin olive oil
- 1 lrg Onion minced
- 1 x green bell pepper minced
- 3 x cloves garlic chopped
- 8 c. water
- 3 x 8 ounce cans tomato sauce
- 1 1/2 c. lentils
- 1 c. brown rice
- 1 c. dry white wine
- 3 x carrots sliced
- 3 x celery stalks sliced
- 2 lrg red potatoes diced
- 2 x zucchini sliced
- 1 tsp dry thyme crumbled
- 1 tsp dry basil crumbled
Directions
- Heat oil in heavy large saucepan over medium-high heat. Add in onion, bell pepper and garlic, saute/fry till tender, about 5 min. Add in remaining ingredients. Cover and simmer till lentils and rice are tender and soup is thick, about 1 hour 15 min. Season with salt and pepper, to taste.
