Lentil Barley Soup
Ingredients
- 3/4 c. Lentils
- 3/4 c. Barley
- 1 x Onion, minced
- 1 can (15z) tomatoes and juice, minced up a bit
- 1 can (15z) tomato sauce Dry parsley Oregano Garlic pwdr
- 1 can (15z) vegetable broth
- 1 x Frzn, (10 ounce) minced spinach, unthawed Some minced carrots
Directions
- I threw it all in a pot and simmered, covered for 45 min. which left it a bit crunchy. i like my veggies crunchy, but if desired mooshier carrots, cook it longer.
