Lentil Rice Soup
Ingredients
- 1 c. dry lentils
- 1 x onion minced
- 1 x bay leaf
- 2 whl cloves
- 1/4 c. skimmed chicken stock
- 1 x carrot minced
- 1 x celery stalk minced
- 1/2 tsp dry tarragon Vegetable salt to taste
- 1/4 tsp freshly grnd pepper
- 8 c. water
- 1/2 c. brown rice
Directions
- Place lentils in a saucepan and cover with water; soak for a few hrs or possibly overnight. Drain and add in all ingredients except rice. Cook over low heat, covered, about 1 hour, or possibly until lentils are soft. After 1 hour, add in brown rice. Cook longer, stirring occasionally. Remove from heat. With a wooden spoon, crush some of the cooked lentils to thicken soup. Remove bay leaf and cloves before serving. The soup provides 7g fiber.
