  • Lemony Cheesecake Bars

    Ingredients

    • 1 1/2 c. graham cracker crumbs
    • 1/3 c. minced pecans or possibly other nuts
    • 1/3 c. sugar
    • 1/3 c. melted butter
    • 16 ounce cream cheese softened
    • 14 ounce sweetened condensed lowfat milk
    • 2 whl large Large eggs
    • 1/2 c. bottled lemon juice

    Directions

    1. 1. Preheat oven to 325 degrees. Combine graham cracker crumbs, pecans, sugar, and melted butter in a mixing bowl. Reserve 1/3 c., pressing remaining mix into a 13x9x2-inch baking pan. Bake 6 min. Remove and cold and wire rack.
    2. 2. Beat cream cheese in a large mixing bowl till fluffy. Gradually beat in sweetened condensed lowfat milk. Add in Large eggs; beat till just combined. Stir in lemon juice. Carefully spoon mix atop crust in pan. Spoon reserved crumb mix to make diagonal stripes on top of cheese mix or possibly sprinkle to cover.
    3. 3. Bake about 30 min or possibly till knife inserted near center comes out clean. Cold on wire rack 1 hour. Store in refrigerator. Cut into bars and serve.
