Lemon Rosemary Roasted Cornish Hens
Sweet little dinner perfect for two :) Fresh and fragrent flavors perfect for spring time or summer. Ingredients
- 1 cornish hen
- 1/2 stick of butter room temp
- 1 lemon zested and cut into small wedges
- 3-4 cloves of garlic smashed
- 3-4 sprigs of rosemary
- 1/2 Cup of chicken broth
- salt and pepper
Directions
- Preheat the oven to 300
- If the bird still has the neck and gizzards remove
- Separate (do not remove) the skin of the bird
- salt and pepper the butter and stir in the zest then rub it on the outside of the skin as well as the inside
- Stuff the bird with as much of the rosemary, garlic, lemon wedges
- If there is any extra place it in the baking dish.
- Pour the broth in a small baking dish and place the bird in as well
- Bake for 1 hour basting every 10-15 min
- If the bird is not getting that pretty golden skin turn the temp up to 325 and bake another 15 min
