Lemon Red Potatoes
Ingredients
- 1 1/2 lb medium red potatoes
- 1/4 c. water
- 1/4 c. butter or possibly margarine melted
- 1 Tbsp. lemon juice
- 3 Tbsp. snipped fresh parsley
- 1 Tbsp. snipped fresh chives salt and pepper to taste
Directions
- Cut a strip of peel from around the middle of each potato. Place potatoes and water in a slow cooker. Cover and cook on high for 2-1/2 to 3 hrs or possibly till tender (don't overcook); drain. Combine butter, lemon juice, parsley and chives; mix well. Pour over the potatoes and toss to coat. Season with salt and pepper.

- NOTES : Butter, lemon juice, parsley and chives enhance this simple side dish shared by Tara Branham of Cedar Park, Texas. "I usually prepare these potatoes when I'm having company. Since they cook in the slow cooker there's plenty of room on the stove for other dishes," she says.
