  • Lemon Pepper Chicken Wings

    Ingredients

    • 5 lb chicken wings (or possibly abt 4 1/4 lbs chicken drumettes)
    • 1/3 cup lemon juice
    • 3 Tbsp. honey
    • 3/4 tsp dry thyme
    • 2 3/4 tsp grated lemon peel
    • 2 1/2 tsp dry peppercorns coarsely grnd (black, green, pink, or possibly a combination) Salt to taste

    Directions

    1. Cut chicken wings apart at joints; reserve tips for other uses. Rinse wings (or possibly drumettes) and place in a single layer in 2 pans, each 10 by 15 inches.
    2. Bake in a 400 degree oven till well browned, about 1 hour and 10 min (about 50 min in a convection oven); turn pcs occasionally with a wide spatula, and switch pan positions halfway through baking.
    3. Meanwhile, in a bowl, stir together lemon juice, honey, thyme, lemon peel, and ground peppercorns.
    4. Drain and throw away fat from chicken wings. Consolidate the wings in 1 pan. Pour the lemon juice mix over wings and turn pcs with spatula to mix well.
    5. Return chicken to oven and bake till sauce thickens and sticks to wings, 12 to 15 min, turning pcs often and scraping pan to release any browned bits.
    6. Place wings in a chafing dish or possibly on a platter. Add in salt to taste. Keep chafing dish hot over a flame, or possibly put platter on an electric warming tray.
    7. This recipe yields 12 servings.
    8. Comments: If making up to 1 day ahead, cold, cover pan, and chill; reheat, covered, in a 300 degree oven about 25 min.
