Lemon Pasta With Shrimp
Ingredients
- 1 pkt Angel Hair pasta, (9 oz)
- 1 Tbsp. extra virgin olive oil and deveined
- 1 x garlic clove, minced
- 1 x lemon, zest of
- 1 x lemon, juice of
- 1/2 c. reduced-sodium chicken broth salt, to taste
- 1 lb large fresh shrimp, peeled
- 1/4 c. cream
- 1/2 c. Parmesan cheese, grated
- 3 Tbsp. fresh cilantro, minced
Directions
- Cook pasta in a large pot of boiling water, according to package directions. Drain and return to cooking pot. Meanwhile, in a large skillet, over medium-high heat, heat the oil. Add in the garlic and saute/fry till soft, don't let brown! Add in the lemon juice and broth and bring to a boil. Add in shrimp, cook till shrimp are opaque, about 3 min. Reduce heat to low; add in cream, cheese and lemon zest. Cook about 3 min to heat through, but don't boil. Taste and season with salt. Combine cream mix with pasta and cilantro, toss to combine.
