Lemon Pasta With Salmon
Ingredients
- 3 c. controlled carb pasta
- 4 x salmon fillets, 3/4" to 1" thk - (6 ounce ea)
- 2 tsp extra virgin olive oil Salt to taste Freshly-grnd black pepper to taste
- 2 Tbsp. butter
- 3 Tbsp. lemon juice
- 1 tsp freshly-grated lemon rind
- 2 bot clam juice - (8 ounce ea)
- 1 c. heavy cream
- 2 Tbsp. Thickenthin Not/Starch Thickener
- 1/3 c. minced dill
- 1 c. frzn peas cooked (optional)
Directions
- Heat broiler. Prepare pasta according to package directions; drain and transfer to a large bowl.
- While pasta is cooking, brush salmon with oil and sprinkle with salt and pepper. Broil 4 inches from heat source, skin-side up about 4 min, turn and broil 4 min more, just till cooked through.
- Prepare sauce: In pasta pot, heat butter over medium heat. Add in lemon juice and lemon rind and cook till almost dry. Add in clam juice and cream. Bring to a boil. Add in thickener and cook, stirring 30 seconds to 1 minute till thickened. Fold in dill and peas. Toss pasta with sauce.
- Gently flake fish on top of sauced pasta. Serve warm.
