Lemon Meringue Pie For Passover
Ingredients
- 4 x Large eggs separated
- 1 c. sugar
- 1 Tbsp. potato starch
- 2 Tbsp. water ds salt
- 2 tsp lemon rind grated
- 6 Tbsp. lemon juice
Directions
- Mix the beaten egg yolks with 1/2 c. of the sugar,the potato starch,water, salt,lemon rind,and juice. Cook over boiling water stirring constantly till the mix is thick and smooth, remove from heat. Beat the whites till stiff with the remaining 1/2 c. of sugar.
- Fold about 1/2 of the ) egg whites into the lemon mix. and then use the rest to top the pie. Bake at 325 for about 15 mins. till very light brown.
