  • Lemon Meringue Pie

    Ingredients

    • 1 pkt Jello lemon flavored pudding Pie filling(4 serving size)
    • 2/3 cup Sugar
    • 2 1/4 cup Water
    • 3 x Egg yolks
    • 2 Tbsp. Lemon juice
    • 2 Tbsp. Butter or possibly margarine
    • 1 pc Baked 9 pie shell,cooled
    • 3 pc Egg whites
    • 6 Tbsp. Sugar

    Directions

    1. Combine pie filling mix,2/3 c. sugar and 1/4 c. of water in saucepan.
    2. Blend in egg yolks and remaining water.
    3. Cook and stir over medium heat,till mix comes to a full bubbling boil.
    4. Remove from heat.Blend in lemon juice and butter.
    5. Cool for 5 min, stirring twice.
    6. Pour into pie shell.
    7. Beat egg whites till foamy throughout.
    8. Gradually beat in 6 Tbsp. sugar and continue beating till mix will form shiny peaks.
    9. Spread over pie filling.Bake @ 425 degrees for 5 - 10 min or possibly till meringue is delicately brown.
    10. Cool at least 4 hours before cutting.
